We have always paid the utmost attention to the ingredients we use, especially in relation to the needs of our guests, also according to the allergies that may concern them.
Ours is a process that starts from afar, already from the search for a raw material that is of extreme quality. A niche product, the result of the attention of the small producers that dot the Val d’Orcia.
“La Terrazza del Chiostro” adheres to the AFC (Out of Home Food) Project and meets in the AIC (Italian Celiac Association). For over fifteen years we have equipped ourselves with everything necessary to meet the needs of those who are gluten intolerant. We have all the products for celiacs and we have prepared a menu completely dedicated to this audience of guests.
Our flours come from the Val d’Orcia mill.
In addition to “gluten free”, we are able to provide vegan and / or vegetarian food lovers with adequate solutions to their needs.
Like the flours, all the raw materials used by our kitchen staff also respond to the canons imposed by the “zero kilometer”. This is why we have relied on the products that the Val d’Orcia Territory already offers in nature.
We can proudly consider ourselves belonging to the restricted circle of promoters of the short, indeed very short, chain and proud supporters of the slogan “… from producer to consumer …”.
